Job Summary:
The Beef Fabrication Manager is responsible for overseeing and managing the fabrication process in a beef processing facility. This role ensures the efficient and safe breakdown of beef carcasses into primal cuts, sub-primal cuts, and retail-ready portions. The manager is responsible for maintaining production schedules, quality control standards, ensuring safety compliance, managing staff, and improving operational efficiency within the fabrication department.
Key Responsibilities:
- Production Oversight: Supervise the daily beef fabrication process to ensure that production targets are met, ensuring products are processed according to company specifications and customer requirements.
- Team Management: Lead, train, and develop fabrication staff to ensure high performance, safety, and quality standards are maintained. Conduct performance reviews and provide coaching.
- Quality Control: Maintain strict adherence to quality control standards to ensure products are consistent with specifications for size, weight, appearance, and packaging.
- Safety & Compliance: Ensure all health, safety, and environmental regulations are adhered to, including OSHA, USDA, and HACCP guidelines. Promote a culture of safety within the department.
- Inventory Management: Monitor raw material inventory levels to ensure a consistent supply for production. Work with the supply chain team to maintain proper stock levels and avoid delays.
- Process Optimization: Identify and implement continuous improvement opportunities to enhance production efficiency, minimize waste, and reduce costs while maintaining product quality.
- Equipment Maintenance: Ensure all fabrication equipment is maintained and in good working condition. Collaborate with maintenance teams to schedule repairs or upgrades.
- Reporting & Documentation: Prepare and maintain production reports, including yield analysis, waste reports, and other performance metrics. Ensure all relevant documentation is complete and accurate.
- Cross-department Collaboration: Work closely with other departments such as procurement, packaging, and shipping to ensure smooth operations and to meet customer demands.
- Cost Control: Monitor and manage labor costs, waste reduction, and material usage to optimize the profitability of the fabrication process.
